Kicked Up "Boxed" Corn Muffins

If you like corn muffins then you'll LOVE these!! 

Now before we start, let me just say these muffins are NOT from scratch but just as good ....if not better (okay that may be stretching it but they are GOOD)!! I try not to cook these often because they're so heavy in carbs but depending on your carb intake (if you're even a carb counter), these muffins may not be a problem for you to indulge as often as you like. 

They're so easy to make and you only need 4 ingredient's!! 

Let's get started...



Ingredients: 1 box of Jiffy corn muffin mix, 2 eggs, 1 can of sweet cream style corn, 1 tablespoon of melted butter.


Box of Jiffy mix added to large mixing bowl.


Adding the cream style corn in.


Whole can of cream corn added.


Now add your 2 whole eggs.


Next, add the last ingredient: your 1 tablespoon of melted butter.


Mix all your ingredients together and it should look like this.


Spray/Butter up your muffin pan to prevent muffins from sticking. (I only have the 6 tin pan and this recipe makes 8-9 muffins).


Place mixture into your muffin pan. Set oven to 400 degrees and bake for about 15-20 minutes. The mixture will rise as it bakes so try not to fill quite to the top as your muffins will expand making them hard to remove.


Straight out of the oven after baking for approx. 17 minutes ...look at this beauty!! (I rubbed more butter on top- I know, I know....shameful)!!!! You can always opt for honey :)

These corn muffins are great for a "quick fix" when you don't have the time or energy to go from scratch! They go great with chili, ANY comfort meal or just a simple sweet fix!
